Thai Cabbage Salad!

(POR) This is a very simple recipe that can transform common ingredients like cabbage and carrots into an exotic, healthy side-dish for any occasion. It is also very easy to change to suit the tastes of different people (see notes below). Try it out and tell us what you think!

Recipe Card: Thai Cabbage Salad

Ingredients:
  • 3 1/2 tablespoons of lime juice
  • 2-3 cloves of garlic – minced
  • 2-3 teaspoons of sugar
  • 2 tablespoons of soy sauce
  • 3 tablespoons of water
  • 1/2 a medium-sized cabbage
  • 5-6 peeled carrots
Instructions:
  • (1) Dressing Mix: Put the lime juice, garlic, sugar, soy sauce and water into a small pan (uncovered) and bring to a slow boil. Mix occasionally. Allow the mixture to bubble slowly for about 10-minutes. Add more water if it begins to thicken during this time.
  • (2) Remove from heat and allow to cool.
  • (3) Wash the peeled carrots and cabbage. Shred with a food processor (or by hand). If by hand, grate cabbage and carrot rather than cutting/chopping them, to ensure proper taste.
  • (4) Place the shredded carrots and cabbage into a bowl. Pour dressing from (1) above onto it and then toss and mix well.
Notes Notes Notes:

A. Suit to your own taste — After trying this recipe you may want to enhance the taste of the dressing in some way. So if you want the dressing in step (1):

  • to be more tangy, add more lime juice.
  • to be sweeter, add more sugar.
  • to be more salty, add more soy sauce.
  • to be stronger, consider doubling the recipe (2* all ingredients).

If you decide to add more of any of these ingredients, cook for an additional minute or two.

B. Cutting cabbage very thinly with a knife doesn’t work. It does not soak up the dressing properly. Shred the cabbage and carrots rather than cutting/chopping them to insure proper taste.

C. The first few bites will likely taste very mild. The taste becomes stronger as you continue to eat the salad. So don’t be surprised if your first bite of the finished salad is very mild. However, after trying this recipe, if you want the dressing to be stronger, just follow the recommendations above in [A. Suit to your own taste].
